Cook Time: 20 – 30 minutes

Ingredients:

8 cups of romaine or leafy greens mix

4 grilled or baked chicken breasts

Sliced mandarin oranges in water

½ cup unsalted, dry toasted slivered almonds

1 Tbsp. sesame seeds

1 small shallot, finely minced

¾ cup olive oil

¼ cup rice wine vinegar

3 Tbsp. lemon juice

2 Tbsp. orange juice

Sea salt, to taste

Freshly ground pepper, to taste if desired

 

Directions:

Place first 5 ingredients in a large bowl (lettuce to sesame seeds). In a separate bowl, whisk together remaining ingredients and add to salad mix.

Toss until all pieces are coated in dressing.

 

Serving Suggestions:

  • You can add in additional fruits or vegetables to make a heartier salad – cabbage, pineapple, carrots, and cucumber match nicely with the dressing.

Additional Notes:

  • To save time or money, you can purchase your own favorite Chinese salad dressing. Watch for soy sauce in the ingredients as soy is avoided on both the Paleo and AIP diets. Or, look for a gluten-free option. Also, look for harmful additives to avoid like maltodextrin and monosodium glutamate.
  • You can make the dressing well ahead of time for added convenience.
